- 3-4 lbs Beef chuck
- 1 bag (12-24oz) Baby carrots (Rainbow)
- 1 lb small Yukon Potatoes
- 1-2 8 oz Mushrooms (yes, optional)
- 2 medium Onions
- Leeks (optional)
- Garlic
- 1 1/2 Tbsp. Tomato paste
- Sweet peas (optional)
- Red wine
- Beef broth
- Thyme
- Parsley
- Salt
- Pepper
- Cayenne pepper

- Open your heart to love and gratitude. Turn on your favorite music. Wash your hands,
- First, chop onions, mince garlic, cut potatoes, and dice the beef chuck into approximately 1-inch pieces. (Here, we like to clean as we cook)
- Rinse the beef, pat it dry, and season it with the salt and pepper. In a large Dutch oven or heavy soup pot, add 2 tablespoons of the olive oil over medium-high heat until hot. Brown the meat in batches, about 2 minutes on each side and about 4 minutes for each batch. Add another tablespoon of oil for each batch. (To sear the meat properly, do not crowd the meat before turning with tongs.) Remove the beef from the pot, set aside on a plate.
- Add the onions, garlic, and balsamic vinegar; saute, stirring with a wooden spoon and scraping the brown bits from the bottom of the pot, for about 5 minutes. Add the tomato paste and cook for an additional minute. Sprinkle with the flour. Stir with a wooden spoon until the flour is dissolved, 1 – 2 minutes. Add the beef and its juices back to the pot. Add the wine, beef broth, water, bay leaf, and thyme. Stir with a wooden spoon and bring to a boil. Next, turn the heat down to low, cover the pot with a lid, and cook for 2 hours or until the beef is tender. Stir occasionally.
- Add the carrots and potatoes. Cover and cook for about an hour, or until the vegetables are cooked and the broth has thickened. Remove the bay leaf and discard it, then taste and adjust the seasoning to taste, if necessary. Serve the stew warm or let it cool to room temperature and then store it in the refrigerator overnight or until ready to serve.
