🧂 Ingredients
- Parchment paper, foil
- 1-2 lbs organic carrots (baby carrots work)
- 1 tbsp of fresh minced garlic
- Pinch of Kosher salt
- 1 tsp red pepper flakes
- Pinch of freshly ground black pepper
- 2 Tbsp organic extra virgin olive oil
- 1 tsp thyme
- 1 tsp chopped parsley
- 1/2 cup organic honey
- 1 tsp brown sugar
- 1 tbsp maple syrup (optional)
- 1 tbsp unsalted butter
The Sauce
- 1 tbsp of fresh minced garlic
- 1 tsp red pepper flakes
- 2 Tbsp. olive oil
- 1 tbsp organic minced garlic
- 1/2 cup organic honey
- 1 tsp brown sugar
- 1 tbsp maple syrup (optional)
- Pinch of freshly ground black pepper
- Pinch of Kosher salt
- 1 tsp thyme
- Make this sauce seasoned to taste. Makes about 1 cup of sauce and is ready in about 3-5 minutes. To save time, make the sauce and pour it over the carrots in the baking dish, and bake.
The Sides
- Glazed ham
- Meatloaf
- Mashed potatoes
- Freshly prepared salad
👩🍳 Bringing It All Together
- Open your heart to love and gratitude. Turn on your favorite music. Wash your hands, clean, rinse the carrots, then pat dry and cut the carrots if you desire, and set aside.
- Preheat the oven to 400°F. Gather a baking dish, line it with foil, then add parchment paper on top of the foil. Set aside.
- In a bowl, mix the sauce ingredients.
- Next, to prepare the sauce: Depending upon your taste, there are two options for making your sauce. The first option is to make it on the stove top, the second option is to prepare the sauce and pour it over the carrots before cooking in the oven. This time, I’ll give you the stove-top method.
- Pour the mixed sauce ingredients into a small saucepan. Place on stovetop on medium-low heat to simmer. Once the sauce comes to a simmer(stir occasionally), turn off the heat and remove the pan from the heat. Toss the carrots in the sauce.
- Pour the sauced carrots into the baking dish and bake uncovered for 35-40 minutes (or until your desired tenderness)
- Finally, plate a goodplate, garnish with chopped parsley, serve hot, and enjoy a dish that never disappoints — gourmet flavor made at home with love.
